Garlic Parmesan Chicken

A creamy Italian-inspired recipe packed with garlic, spinach, and mushrooms for a dinner that’s healthy and satisfying.

Chicken, mushrooms, spinach, cheese, broth, seasonings.

Groceries Needed

• Low-fat cream cheese
• Rice, pasta, or couscous
• Parmesan cheese

 

Optional Additions

• Garlic (for stronger flavors)
• Salt and pepper, to taste

Preparation & Serving Instructions

Total Time: Cook time + 15 minutes

Cook: Cook on manual for 30 minutes, or to internal temperature of 165° F. Natural pressure release. May add ¼ cup liquid before cooking to bring to pressure. Add 4 oz cream cheese and stir until melted.
*If chicken isn't cooked through, shred chicken and switch to sauté setting.

Serve: Serve over pasta of choice. Top with parmesan cheese.

Alternative Serving Instructions:

Serve over mashed potatoes, rice, or cauliflower rice.
